  • 2 pounds pork loin
  • 1 cup apple cider
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon thyme
  • 4 sweet potatoes
  • 1/2 cup butter
  • 1/2 cup milk
  • 2 tablespoons brown sugar

Instructions

  1. Preheat your oven to 375°F.
  2. Rub the pork loin with olive oil, salt, pepper, and thyme.
  3. In a roasting pan, place the pork loin and pour apple cider over it.
  4. Roast in the oven for about 1.5 hours or until the internal temperature reaches 145°F.
  5. While the pork is roasting, peel and chop the sweet potatoes.
  6. Boil the sweet potatoes in salted water until tender, about 15 minutes.
  7. Drain and mash the sweet potatoes with butter, milk, and brown sugar.
  8. Once the pork is done, let it rest for 10 minutes before slicing.
  9. Serve the sliced pork with the mashed sweet potatoes.
