  • 1/2 cup rolled oats
  • 1/3 cup brown sugar
  • 1/4 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup yogurt
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the dry ingredients: flour, oats, brown sugar, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix the melted butter, yogurt, eggs, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries.
  5. Divide the batter into the muffin tins.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Let cool before serving.

Notes

  • For a healthier option, you can substitute half of the all-purpose flour with whole wheat flour.
