  • 2 medium sweet potatoes

  • 2 cups spinach

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and chop sweet potatoes into cubes.
  3. In a bowl, mix sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper.
  4. Spread sweet potatoes on a baking sheet and roast for 25-30 minutes.
  5. While sweet potatoes roast, season chicken breasts with salt and pepper.
