Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Trim the Brussels sprouts and cut them in half. Peel and chop the root vegetables into bite-sized pieces.
  3. In a large bowl, combine the Brussels sprouts, root vegetables, green beans, olive oil, garlic powder, thyme, salt, and pepper.
  4. Spread the vegetable mixture on a baking sheet in a single layer.
  5. Roast in the oven for 25-30 minutes, stirring halfway through, until the vegetables are tender and caramelized.
  6. Serve hot as a festive side dish.
