  • 1 cup packed brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups canned pumpkin puree
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large mixing bowl, combine granulated sugar, brown sugar, and oil. Mix well.
  3. Add eggs one at a time, mixing well after each addition, then stir in pumpkin puree.
  4. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add dry ingredients to the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared baking pan and smooth the top.
  7. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  8. While the bars are cooling, beat together cream cheese and butter until smooth.
  9. Gradually add powdered sugar and milk until the frosting is smooth and creamy.
  10. Spread the frosting over the cooled pumpkin bars and cut into squares.
