  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup pumpkin puree
  • 1/2 cup chicken broth
  • 1 tablespoon fresh sage, chopped
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground turkey, breadcrumbs, Parmesan, egg, garlic, salt, and pepper.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake for 20 minutes or until cooked through.
  5. In a skillet, heat olive oil over medium heat, add pumpkin puree, chicken broth, and sage. Stir well.
  6. Add meatballs to the skillet and simmer for 5 minutes in the sauce.
