  • 3 pounds chuck roast
  • 8 slices turkey bacon
  • 2 tablespoons olive oil
  • 1 cup onions, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup French onion soup
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon thyme
  • 1 teaspoon black pepper
  • Salt to taste

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a large Dutch oven, cook the turkey bacon until crispy. Remove and set aside.
  3. In the same pot, sear the chuck roast on all sides in the bacon fat over medium-high heat. Remove from pot.
  4. Add onions and garlic to the pot; sauté until soft.
  5. Deglaze with beef broth and French onion soup, scraping up any browned bits from the bottom.
  6. Stir in Worcestershire sauce, thyme, black pepper, and salt.
  7. Return the roast to the pot, cover, and place in the oven.
  8. Cook for 3-4 hours or until the meat is tender.
  9. Serve sliced with the gravy and bacon on top.
