1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
1 cup granulated sugar
24 ounces cream cheese, softened
4 large eggs
1 teaspoon vanilla extract
1 cup sweetened shredded coconut
1 cup chopped pecans
1 cup semi-sweet chocolate chips
Instructions
Preheat the oven to 325°F (163°C).
In a medium bowl, mix graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a springform pan to form the crust.
In a large mixing bowl, beat cream cheese and sugar until smooth and creamy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
Gently fold in shredded coconut, chopped pecans, and chocolate chips into the cream cheese mixture.
Pour the filling into the prepared crust and smooth the top. Bake for 55-60 minutes, or until the center is set.
Let the cheesecake cool, then refrigerate for at least 4 hours before serving.
