  • 1 cup heavy cream
  • 1/2 cup pumpkin puree
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin spice
  • 1 cup coffee, brewed and cooled
  • 12 ladyfingers

Instructions

  1. In a mixing bowl, combine mascarpone cheese, heavy cream, pumpkin puree, sugar, vanilla extract, and pumpkin spice. Whip until smooth and fluffy.
  2. Dip ladyfingers briefly in cooled coffee.
  3. Layer half of the mascarpone mixture in a dish, followed by a layer of coffee-dipped ladyfingers.
  4. Add another layer of the mascarpone mixture and top with remaining ladyfingers.
  5. Chill in the refrigerator for at least 4 hours before serving.
