- 4 large russet potatoes
- 6 slices turkey bacon
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 4 cups chicken broth
- 1/2 cup chopped green onions
- 1/2 cup heavy cream
- 2 tablespoons butter
- 1 teaspoon garlic powder
- Salt to taste
- Pepper to taste
- In a large pot, cook the turkey bacon until crispy. Remove and chop.
- In the same pot, melt butter and add chopped potatoes and chicken broth. Bring to a boil.
- Reduce heat and simmer until the potatoes are tender.
- Add heavy cream, garlic powder, salt, and pepper. Mash some potatoes for a thicker texture.
- Stir in sour cream and half of the cheese, mixing until melted.
- Serve hot, topped with bacon, remaining cheese, and green onions.
Notes
- For a vegetarian version, omit bacon and replace chicken broth with vegetable broth.
- This soup thickens as it cools, add more broth if needed when reheating.
