A creamy and indulgent baked potato soup recipe, featuring turkey bacon for an added twist.

Ingredients

  • 4 large russet potatoes
  • 6 slices turkey bacon
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 4 cups chicken broth
  • 1/2 cup chopped green onions
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  2. In the same pot, melt butter and add chopped potatoes and chicken broth. Bring to a boil.
  3. Reduce heat and simmer until the potatoes are tender.
  4. Add heavy cream, garlic powder, salt, and pepper. Mash some potatoes for a thicker texture.
  5. Stir in sour cream and half of the cheese, mixing until melted.
  6. Serve hot, topped with bacon, remaining cheese, and green onions.

Notes

  • For a vegetarian version, omit bacon and replace chicken broth with vegetable broth.
  • This soup thickens as it cools, add more broth if needed when reheating.
