Ingredients
Scale
2 cups all-purpose flour
1 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
1 cup milk
1 1/2 cups fresh blueberries
1/2 cup brown sugar
1/3 cup all-purpose flour (for streusel)
1 teaspoon ground cinnamon
1/4 cup unsalted butter (for streusel)
Instructions
Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, mix the melted butter, eggs, vanilla extract, and milk until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the blueberries gently.
In a small bowl, mix the brown sugar, flour, and cinnamon. Cut in the butter until the mixture resembles coarse crumbs to create the streusel topping.
Divide the muffin batter into the prepared muffin tin and sprinkle the streusel topping evenly over each muffin.
Bake for 18-20 minutes or until a toothpick inserted comes out clean.
Let cool for a few minutes before transferring to a wire rack.
Notes
For best results, use fresh blueberries; frozen can be used but may lead to a denser muffin.
