Deliciously juicy skillet chicken thighs served with a creamy broccoli cheddar orzo, perfect for a weeknight dinner.

Ingredients

  • 4 chicken thighs
  • 1 cup orzo pasta
  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken thighs with garlic powder, onion powder, salt, and pepper. Cook in the skillet until browned.
  3. Remove chicken and set aside. In the same skillet, add orzo and toast slightly.
  4. Add broccoli and water. Stir, then add chicken back into the skillet.
  5. Cover and simmer until orzo is cooked. Stir in cheese until melted.

Notes

  • For extra flavor, marinate chicken thighs in a spice mixture overnight.
  • Replace orzo with rice if preferred.
