A delicious recipe combining sweet potatoes and tart cranberries for a comforting dish.

Ingredients

  • 4 large sweet potatoes
  • 2 cups fresh cranberries
  • 1 cup heavy cream
  • 1/2 cup maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 pinch salt
  • 1 cup grated cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Peel and slice sweet potatoes into thin rounds.
  3. In a mixing bowl, combine cranberries, heavy cream, maple syrup, cinnamon, nutmeg, and salt.
  4. Layer sweet potatoes and the cranberries mixture in a greased baking dish.
  5. If desired, sprinkle grated cheese on top.
  6. Bake for 45-50 minutes until sweet potatoes are tender.

Notes

  • Let the dish sit for a few minutes before serving.
  • Can be made a day in advance and reheated.
