A delicious and comforting soup that combines tender chicken, fresh vegetables, and aromatic herbs, perfect for any day.

Ingredients

  • 1 pound chicken breast, diced
  • 2 cups diced tomatoes
  • 1 cup kale, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onions and garlic, sauté until translucent.
  3. Add the diced chicken and cook until browned.
  4. Stir in diced tomatoes, chicken broth, oregano, and basil. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Add the kale and simmer for another 5 minutes.
  7. Season with salt and pepper to taste. Serve hot.

Notes

  • For extra flavor, add Parmesan cheese before serving.
