Ingredients

  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups potatoes, diced
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the turkey bacon and cook until crispy. Remove and crumble.
  3. In the same pot, add onion, carrots, and celery. Sauté until soft.
  4. Add garlic and cook for another minute.
  5. Pour in the vegetable broth and add potatoes, thyme, rosemary, salt, and pepper. Bring to a boil.
  6. Reduce heat and simmer until potatoes are tender.
  7. Stir in peas and heavy cream, heat through.
  8. Top with crumbled turkey bacon before serving.

Notes

  • For a vegetarian option, omit the turkey bacon.
  • Add more vegetables like corn or green beans for extra flavor.
